In the 1800s, the art of setting the table emerged, and it quickly became popular to have a lot of cutlery. The table setting became a manifestation of etiquette, and the menu determined how it should be done. Each dish had its particular cutlery, which was set as new dishes were served. The ways they used cutlery distinguished who were parvenus from those who knew which cutlery to use for what. Today, tables are set to look elegant, not to point out parvenus.
